My ankle has been feelin’ pretty good, so I attempted the treadmill this morning for a test…and ran 6.25 miles without any pain! Hoooray! I averaged about 8:40/mile and did a 1.0 incline.
Even being injured only a week makes me so grateful for the ability to run 🙂 I think it’ll be back to the park tomorrow morning – and I’ve missed it!
I have another exciting salad to talk about, sans beans (need a break from them, whew), but with a lot of other good stuff. I proclaimed my love for cilantro last week, but I do believe I’m going to make the little herb jealous by saying how much I effing love mint. How could I not have realized it until now??
Just a whiff of this stuff at Whole Foods forced me to put it in my basket, and I went from there on creating a delicious dinner. I used the salad Darby made for me a few weeks ago as inspiration, and picked up a mini-watermelon.
Note to self: watermelons are heavy when purchased with other groceries and carried home via subway. Hrrmf.
After I lugged everything home and chopped up the watermelon (enough for about a week!), this salad was super quick to put together. I added some arugula, organic grape tomatoes and goat cheese and I was in business. SO SO GOOD with a little balsamic/olive oil dressing. I added some ground turkey breast for protein after taking the photos because it looked less pretty 🙂
Juicy and refreshing – it barely needed the dressing at all.
