Hoooray for the cooler temps outside, finally! I really had to restrain myself from running this morning – it was a scheduled XT day and my legs were screaming for it.
I’m so, so happy to be back to pretty much full running strength after the ankle mishap – I do think this recovery was a “get out of jail free” card from the running Gods. And a warning not to push myself too hard.
‘Cause I never do that, mmm hmmm…
So this morning I sweat through 30 minutes on the spin bike, 30 minutes on the elliptical and did some lifting. I was definitely feelin’ some soreness after Saturday’s 14 miles and Sunday’s 5 miles, so I also spent some QT with the foam roller.
My appetite has been a little funky the past couple of days (probably the heat?), but I’ve been doing my best to refuel with a little help from quinoa, a great super-grain that just happens to be super-tasty.
TJ’s organic red quinoa, to be exact. My goal was to create some sort of delicious quinoa salad that could be eaten cold.
I also wanted to use some of the veggies I already had in my fridge, so I chopped up a plum tomato, red/yellow/green pepper, broccoli, red onion and a few grape tomatoes.
I picked up some cooked shrimp and a can of sweet peas from Whole Foods (don’t ask me what the motivation for the peas was, I’m actually not sure…).
I also wanted to use some of the mint I had left over from last week’s watermelon salad with arugula, goat cheese and tomato. I wasn’t totally sure how this combination would taste all together, but I mixed it up, added some slivered almonds, lime juice and a splash of olive oil and voila!
This was sooo good! There are so many delicious ingredient combinations that can be added to quinoa – it’s really versatile and I heart it.
I also heart Greek yogurt mixed with PB & Co Dark Chocolate Dreams peanut butter. I heart it even more with some banana oatmeal chocolate chip cookies crumbled in.
One last thing that I heart – having a random Monday off. And going to the beach on a beautiful day…
