Hope everyone is having a good weekend!
I’m guardedly excited (if that’s possible?) that my Saturday morning involved more running – even if it was on a treadmill.
- 30 minutes elliptical
- 27 minutes easy running (about 3 miles)
- 20 minutes elliptical
Since I’m still so used to running long on the weekends, I tried to pretend this was somewhat of a longer run effort (meh?). The Achilles felt pretty good during the run (hooray!) and this morning it’s still feelin’ ok. I’m absolutely chomping at the bit to get back outside, and aiming for Tuesday or Wednesday for a (hopefully) triumphant return to Central Park if everything is still progressing. Fingers crossed!
Most of the rest of my Saturday involved studying anything and everything carbohydrates for a test on Monday, but I did manage to make a quick and delicious lunch.
I took advantage of the fact that Florida strawberries are in season right now and very reasonably priced
I chopped them up into a large pan and sprinkled with brown sugar, added some walnuts and turned the heat on to medium
When you caramelize, adding water to the mix to keep everything moist helps the process along
After a few minutes it was smelling amazing
Added on top Greek yogurt, cinnamon and dried cherries and drizzled with honey
It was seriously delicious! Next time I’ll probably add a dollop of Dark Chocolate Dreams peanut butter – chocolate + strawberries = happy Kelly.
I’m off for more studying, but stay tuned for a post on carbohydrates and running – how much you need, when, and how to replenish those glycogen stores!
