Yesterday, I was strangely chipper for a Monday.
This was obviously a direct result of the fact that I RAN 4.25 miles with no Achilles pain whatsoever:
- 20 minutes elliptical
- 38 minutes easy running on the treadmill (4.25 miles)
Just last week I was doubting my return to any sort of running so soon, but some massage, ice and stretching has really helped in the past couple days. I wanted to test it out once more on the treadmill before I hit Central Park later this week (OMG, OMG, can’t wait – I’ve missed it so much)!
Not being able to run for a whole month threw me off in so many ways, and I didn’t realize just how much until I felt such relief, normalcy and elation yesterday after my run. I know some bumps in the road may still occur, but I feel like I’m back.
Right now the goal is to focus on a continued recovery rather than any planned races for at least a few weeks. Baby steps is they key for someone like me – a type A crazy who is likely to do too much, too soon. Keep me in check, ok?
Anyways, before I embarked on a weekend of studying carbohydrates, I visited one of Manhattan’s best vegan restaurants, Angelica Kitchen, with my pal Natalie. I’m not vegan nor vegetarian, but vegan restaurants are by far my favorite. The dishes are always creative and full of veggies (obviously), and while on the healthier side, full of flavor.
Angelica Kitchen is also BYOB (no corking fee), so we enjoyed a bottle of vino courtesy of TJ’s (a cheap Spanish red)
We had to get the Southern style cornbread – so flavorful and delicious
For my entree I had the warm roasted vegetable salad over arugula with balsamic vinaigrette, and garlic crostini with creamy hummus
The dish was warm and comforting – perfect for a windy, cold night. The meal and the company left me perfectly content (and a little tipsy, homegirl has no tolerance) and ready to start the weekend.
Question: Do you like vegan restaurants? Have a favorite?
